Recommendations

If you use a winch to haul in your sheet then your rope will be different to someone that uses a 1:36 purchase and brute force, to start with a line running through a 1:36 will will be much longer.

Stretch is not the most important factor for mainsheets. On the top racing boats you may want to go for a high tec line to save weight; both because of the higher breaking strength means you can go for a smaller diameter, but also because Dyneema does not absorb water. If your rope is going to be going through a winch you will need to go for something that can handle that, or if you use a purchase system the rope will have to cope with bending fatigue which rules out wire.

Other than saving weight there aren't many reasons why a good quality double braid polyester will not do the job.
