Spinnaker sheets do not take a huge strain. Weight is probably the most important factor with spinnaker sheets. In light winds the weight of the rope can weight the spinnaker down causing it to loose power. For this reason light weight high tec ropes are favoured. To reduce weight, the top racing boats will cut the jacket off the majority of the line only leaving the jacket on the section that needs to be handled and put on a winch. However if practicality is favoured over speed, double braid polyester will be fine.
